Best Friends Forever


Today I celebrate the life of my best friend.  The scroll you see on this page was a gift from her many years ago.  One of the verses says,

"When I think of our good times, it makes me smile
remembering them all, and it makes me glad knowing
there will be more good times ahead of us."

When she gave it to me I had no idea how the meaning of that verse would be transformed into something so significant.  Stephanie is still with me, and I believe we are still experiencing some good times together.  She is my inspiration for most everything that I do.  Indeed, there will be more good times ahead of us.

Mashed Cauliflower

This simple, healthy and delicious recipe makes several servings.  It's a great side dish!

INGREDIENTS
1 head of cauliflower
Dash of salt
1/4 cup of your favorite Greek yogurt

DIRECTIONS
1.  Steam cauliflower for approximately 40 minutes, until soft
2.  Mash cauliflower in a mixing bowl
3.  Add yogurt and salt.  Mix it all up and enjoy!

Veggie Tuna Salad

I recently began tracking all of the food I eat in an effort to lose a few more pounds.  I have been trying to lose those few pounds for a while now and nothing seemed to be working.  The one thing I started doing a while ago, but stopped, was writing down everything I eat everyday.  These past few days I have been very strict about documenting everything again and so far it seems to be working.  While I have not seen evidence on the scale yet, I am much more mindful about my food choices.  I am eating less, but because I'm making healthy choices I still feel satisfied.  I've been turning down extra calories that I simply don't need.  Having a daily goal each day helps.  Right now I am focusing on counting calories since everything else is on the right track.  Of course, I can stand for some improvement in other areas, but I believe by eating this way and tracking everything it will all fall into place. 

A friend told me about this Veggie Tuna Salad recipe and I made my version of it.  Salads do not usually fill me up, but I decided to give this one a try.  I figured with the tuna I would have protein and if I added enough veggies that should do the trick.  The basic concept is to add a 3 oz. can of tuna (packed in water, not oil), salt and pepper to taste and lots and lots of veggies.

INGREDIENTS:
3 oz. can of tuna in water drained
1 cup raw baby spinach
1 carrot, peeled and sliced
10 cherry tomatoes
1/2 cucumber, sliced
1/4 cup broccoli
1 yellow bell pepper
10 black olives
salt and pepper to taste

DIRECTIONS:
1.Mix everything together in a mixing bowl.
2.Transfer to a dish and refrigerate for approximately 4 hours, then indulge!

Eating healthy can be fun!  This salad allows you to be creative because you can add whichever veggies and seasonings you like.  I made this salad the morning I had a doctor's appointment.  It was so nice to come home and have a healthy lunch waiting for me.  Besides that, it looked so pretty and I considered it a personal and delicious work of art!

The Clasp that Brought Closure and a New Beginning

Recently I was going through the bead collection that was given to me by Stephanie's parents after she passed away.  I came across a set of beads that were very appealing to me.  I started to pull them out and I realized they had already been strung.  By the time I took the entire strand of beads out I realized that not only were the beads strung, the clasp was ready to be secured.  It became clear to me that this was a project Stephanie started and now it was my job to finish it.

The clasp she used was among a set we bought at one of the many bead shows we attended together.  I have a stash of those clasps too, but I had never ventured into using them.  They were different and I wasn't quite sure how to secure them.  Stephanie was telling me it was time to learn.

I completed the project, then wondered what to do with this beautiful creation.  I knew this necklace wasn't meant for me to keep.  It's Redskins colors and Stephanie knew I was a Ravens fan first and foremost.  I decided to give it to her mom for Christmas.  She loves the necklace and was touched by the story behind it.

So closure has been brought to the necklace along with a new beginning for me.  I wholeheartedly believe this was Stephanie's way of telling me to venture into new things, like learning how to secure those kinds of clasps.  I hear you, Stephanie.  I'll keep this in mind in this new year and I know you'll be with me every step of the way.
